Ingredients:
4 lbs pork butt
2 cups water
2 Tbsp liquid smoke
4 Tbsp Hawaiian salt
Procedure:
Score pork.
Combine liquid smoke, water and salt and pour over pork and marinate
2-3 hours or overnight.
Put pork and marinade into large casserole and cover.
Microwave on high for 30 minutes.
Turn and continue to cook for an additional 80 minutes at 70% power.
Turn pork every 20 minutes.
When finished cooking, allow to remain in the microwave for 15 additional
minutes.
Remove from microwave and shred. May add a small amount of liquid to
shredded meat, if so desired.
